Alaska Seafood Presents The Field Kitchen Theatre

This year, in a bid to spread the WILD word, we have partnered with The Game Fair to celebrate their 60thanniversary when the event returns to Ragley Hall from 27 – 29 July 2018. As headline sponsors of The Field Kitchen Theatre, we will be there in force cooking up some wild salmon dishes with the help of the renowned chefs Jose Souto, Alyn Williams, Mike Robinson and Cyrus Todiwala.

The three day countryside festival is a hugely popular event that has a strong focus on wild produce, from seafood to game and all that’s in between. A real foodies paradise, there will be plenty to try and taste including lunch at James Martin’s pop-up restaurant open to all visitors.

As Alaska Seafood, our aim is very much to inspire confidence and creativity in fish cookery as well encouraging consumers to start asking questions about sustainability and responsible food sourcing. Jose Souto, a senior chef lecturer at Westminster Kingsway College, will be tackling some of these questions head-on during the panel discussion about sustainability on Sunday 29th July at 1:30pm.

But for now a little something to get the taste buds going – a snapshot of what to expect:

– Gin-infused salmon

– Sockeye salmon cooked four ways – hot smoked / cold smoked / cerviche / tartare

– A wild salmon tikka with Balvenie
